So in your graph, the darkest areas should be at the bottom towards zero, and above, towards 37.  I see the most dense region is from 5 to 20.  Do I conclude the ball lands mostly about 12-15 pockets further than expected?

That's not the wheel speed.  The distance between 19 and 36 does not represent wheel speed.  You're just graphing the dealer's signature yardage.  That method is as old as the hills.
I'm beginning to think that there's a translation problem between English and your native language.  You're just not understand what wheel speed represents.

You should do 2 columns in excel: one for the scatter, and one for how many spins resulted in x-pockets.
