I definitely don't set win goals in relation to my bankroll since I'm usually winning several times my initial buy in bankroll.  I also don't set a stop loss, but rather a freeze point based on if I perceive conditions have shifted.

Hit and running is reserved for gambling, not AP play.  APs don't ride the waves of luck, we plunder the casinos with our advantage.  That's why we snicker at the idea of playing just 10 or 20 spins like the KFC crowd plays.
